Spicy banana muffins with fudge and almonds

This is my last this season Christmas like theme muffins. Those muffins are very moisture, thick and extremely sweet. Not everybody will like them but I think they are quite tasty.

Ingredients for 6-8 muffins:
  • 2 ripe bananas
  • 220g flour
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 30g vanilla sugar
  • 1 tsp cinnamon
  • 1 tsp powdered cloves
  • 1/2 tsp ginger
  • 80g dark muscovado sugar
  • 150 ml buttermilk
  • 1 egg
  • 6 fudge candies
  • almonds to sprinkle
Preheat the oven to 180C. Line muffin tin with paper cases.
Cut the fudge candies into smaller pieces.

In a big bowl mash the bananas, add the buttermilk and egg and stir well. In a separate bowl whisk together the flour, baking powder, soda, sugar, spices. Pour the wet ingredients mixture into a bawl with dry ingredients. Mix them until all ingredients are combined. Do not over stir the mixture. Spoon the batter into paper cases, sprinkle top of each muffin with the fudge and almonds. Bake for 20-25 minutes or until wooden stick picked in the middle of muffin comes out dry. Enjoy !

Pear and fudge muffins

My house was filled with divine, sweet fragrance mixture of baked pears, fudge and coconut, today. I used recipe from this website and changed  it a little bit. Muffins were sweet, moisture and sticky. And this fragrance, I mentioned earlier about, made me to eat one muffin just after being baked and I burned my mouth a little bit.


Ingredients for 12-18 muffins:
  • 300g self rising flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 85g brown sugar
  • 250 ml buttermilk
  • 2 eggs
  • 100g melted butter
  • 3 pears
  • 100g soft fudge
  • some dessicated coconut


Peel of the pears and dice them on smaller pieces, set aside. Dice the fudges into smaller pieces. Melt the butter.

Line muffin tin with paper cases. Preheat the ove to 200C.

In a big bowl sift the flour, baking powder, cinnamon, sugar. Whisk them together. Add the pears and part of the fudge pieces.
In a separate bowl whisk the eggs with buttermilk.
Pour this mixture along with melted butter into dry ingredients. Stir everything together but do not over-stir the batter. Spoon the batter into paper cases, sprinkle evenly with leftover fudge and with coconut. Bake for 25-30 min. Place on wire rack to cool down. 
Do not eat hot, as the fruits and fudge needs more time to cool down. Enjoy !

Fudge nut muffins

They are sweet, crunchy ... yummy :)





















Ingredients for 12 muffins:
  • 250g plain flour
  • 4 tsp baking powder
  • 85g caster sugar
  • 6 tbsp crunchy peanut butter
  • 1 beaten egg
  • 55g melted butter
  • 175 ml milk
  • 150g diced fudge
  • 3 tbsp roughly chopped unsalted peanuts
Preheat the oven to 200C. Line 12 hole muffin tin with paper cases.
Sift the flour and baking powder into large bowl. Stir in the sugar. Add the peanut butter and mix until the mixture change into crumbles. 
In a separate bowl put the egg, butter and milk. Beat together.
Combine dry and wet ingredients. Lightly stir in the fudge pieces. The mixture should be a little lumpy.
With two spoons or ice cream scoop put the mixture evenly into paper cases. 
Sprinkle the peanuts on the top and bake for 20-25 min until well risen.
Cool down on a wire rack. They can be served warm.
